Written by an Aragonese Franciscan monk, Nuevo Arte de Cocina is a Spanish popular cookbook first edited in 1745. The simplicity of its recipes, combined with touch of humor and a very practical approach, made it a success: it was reissued more than a hundred times and spread by the Franciscan missionaries, who took the book as a gastronomic dogma.
